Mini Cannoli Bites

One of the advantages of blogging is doing "Link Parties" wherein you share your latest projects and check in on the projects that others have done.  Most blogs request that you visit at least two other links if you link up your own...and so you really get to see a lot of what's out there.

This weekend I was exposed to a new recipe - The Mandatory Mooch posted a recipe for Mini Cannolis.  I'm not a huge fan of cannolis, honestly, but the finished product looked delicious, and I had a barbeque to attend on Labor Day, so I decided to make these guys.

Simple ingredient list.
Simple process.
No baking = cool kitchen.

What was there to lose?

Here's how mine turned out -

I added in some almond extract in addition to the vanilla extract, and I omitted the vanilla extract. I used off brand cookies in place on Nilla Wafers - turns out off brand ones are tiny!  So I made mini cannoli bites.  :)


They turned out beautiful, and they are yummy.

I never got to share them though - my youngest wasn't feeling good enough to go to the BBQ.  So now I have to eat all these myself. Darn.  Anyone want to help?
